Ube Whoopie Pie

Whoppie pie and ube. 

Who knew that ube enjoy its moment in the sun.  It seems to be everywhere -- from ice cream, to pandesal, to cakes, to baked goods. 

And what better way to make use of this beloved ingredient from the Philippines than using the wonderful flavor of ube in a cake, and pairing it with the ice cream flavor of your choice. 

Ailynn Santos shows us how. 
Ingredients
  • ½ cup butter, softened
  • ​1 cup granulated sugar
  • 1 egg, room temp
  • 2 tsp ube extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup milk, room temp

Procedure
  1. Preheat your oven to 350degF. Line 2 baking pans with parchment paper or a Silpat mat.
  2. Cream together the butter and sugar until nice and fluffy (about 3 minutes). Add the egg and continue creaming for another 2 minutes.
  3. Add ube extract and mix until combined. Scrape the sides and bottom of the bowl to make sure everything is evenly mixed.
  4. Add in the flour, baking soda, baking powder, and salt. Mix for 30 seconds.
  5. Pour in the milk and mix until everything is nicely combined.
  6. Using a 2 oz ice cream scoop, scoop the batter onto your prepared baking pans (about 7-8 per pan). Bake for 8 minutes, then switch the pans and bake for another 7-8 minutes. The cakes are done when you press on the tops, and the tops spring back up.
  7. Let the cakes cool for 2-3 minutes then place them on a cooling rack. Make sure they are fully cooled before making your ice cream sandwiches.
