Tita Pearl’s Kaldereta Nachos

Looking for a qui ck snack or meal? Why not make some Kaldereta Nachos? 

Here’s Tita Pearl’s quick version that is sure to satisfy everyone’s palate and stave off those hunger pangs!

Ingredients

Kaldereta
  • Equal parts of ground pork, beef, and pork skins
  • Tomatoes, chopped
  • Onions, chopped
  • Celery, chopped
  • Annatto powder
  • Safflower (or saffron)
  • Caldereta Mix (Tita Pearl uses McCormick brand)

Chips
  • One bag of tortilla chips or you can make your own. ​

Procedure
  1. Brown the meat in a hot pan. 
  2. Add the tomato, onions, celery, annatto powder, safflower,  and caldereta mix. 
  3. Cook until all the flavors are incorporated and the meat mixture is cooked and browned. 
  4. Take off the stove, and transfer to a plate. 
  5. Sprinkle cheese on top. 
  6. Cut the tortilla chips into triangles. 
  7. Fry the triangle pieces in coconut oil. 
  8. When done, the chips will be crispy. 
  9. Sprinkle singing mix on the tortilla chips while hot. If you don’t have have singing mix, just sprinkle with salt and pepper. 
  10. Use to dip into the kaldereta nachos and/or the mango salsa. 
  11. Enjoy.
