Ensaladang Talong
(Grilled Eggplant)

ingredients
  • Eggplant, grilled
  • Onion, diced
  • Tomato, diced
  • Olive Oil
  • Citron (citrus) Juice
  • Salt
  • Sesame Oil
  • Herbs (your choice - coriander, ciboulette, thyme, or herbs de Provence, basil, or oregano)



Procedure
  1. ​Grill the eggplant over an open flame to char the skin. If you don’t have access to an open flame you can broil the whole eggplant in your oven until the skin is charred. 
  2. Once charred, remove the eggplant and peel the skin. 
  3. Dice the eggplant in bite-size pieces. 
  4. In a bowl, add the eggplant. tomatoes, onion, and herbs of your choice. 
  5. Drizzle with olive oil, citron juice. 
  6. Season with salt and pepper
  7. ​Add a small amount of sesame oil (to taste). 
  8. Serve and enjoy.
