Nilingta Ikan

Ilocano cuisine is clean, simple, using fresh ingredients. 

Nilingta Ikan is one of those dishes. The cooking style may be similar to paksiw, with one big difference -- nilingta does not use any vinegar.  Fresh flavors. 

It’s so simple and easy to make. Try it and let us know how you like it!

ingredients

  • Fish
  • 3 pcs. tomato (big size)
  • 1 whole onion
  • Ginger 300grams
  • celery 300 grams
  • eggplant ( if there is available papaya, sayote or ampalaya much better)


Procedure
  1. Clean the fish. You can use a whole fish or fillets. 
  2. Slice your tomatoes and onion. 
  3. Grate your ginger and celery, and mix. 
  4. Slice your vegetables. 
  5. Lay your vegetables, tomatoes, onion at the bottom of your pan. 
  6. Lay the fish on top of the vegetables. 
  7. Pour the ginger and celery mix over. 
  8. Cover and cook for 5 minutes. Do not over cook or the fish will be rubbery. 
  9. Serve and enjoy.
