Ube Pudding

This Ube Pudding isn’t just celebrating the color purple but significantly, purple yam’s beauty in every bite.

Many of the unacquainted will always wonder what’s with this passion for ube. I believe it is the deep and imposing color that is synonymous with royalty that draws people in. It is hard to define its flavor. It is earthy with a sweet buttery aroma. When combined with dairy products, the flavor comes to life!

This ube pudding is so easy to make, and such an elegant treat to serve. I hope you enjoy making, and eating this dish.

Ingredients

For the Ube Paste: 
  • 10g dehydrated ube
  • 10g Purple Yam powder
  • 120g Coconut Milk

For the Pudding 
  • 200g Condensed Milk
  • 360g Milk, full cream
  • 150g, Instant Vanilla Pudding
  • 100g Cream Cheese, softened
  • 300g Whipped cream

Other Ingredients (Optional)
  • Graham crackers
  • Macapuno
  • Pinipig, roasted

Procedure

  1. Combine all the ingredients in a pot and cook over medium heat, stirring constantly until thickened. Let it cool down to room temperature
  2. Once cooled, place the cool use mixture in a bowl and add the pudding ingredients
  3. Using the whisk attachment, use your handheld blender to mix all the ingredients until smooth. 
  4. When you have reached the right consistency, add your cream cheese and continue mixing until smooth. 
  5. Using a spatula,  add the whipped cream, being careful to fold it in so as not to lose the aeration 
  6. Top off with graham crackers, macapuno, and or  roasted pinipig. Serve and enjoy.
