Impossible Longganisa Ramen Burger
​with Banana Ketsup Aioli

What do I do with the left over ramen noodles and ‘meat’ mixture? I make appetizers!

Ingredients

Impossible Longganisa Burger
  • 1 package impossible meat (12oz pkg) 
  • 5 med cloves garlic, minced using a microplane grater 
  • 1/4 cup muscovado sugar 
  • 1/2 tsp salt 
  • 3/4 tsp ground black pepper 
  • 1 tbsp datu puti vinegar or anything similar 

Ramen Burger
  • 4 bricks instant ramen of choice (I used A-Sha Tainan noodles) 

Banana Catsup Aioli
  • 3 tbsp vegenaise
  • 3 tbsp Jufran ketsup
  • 1/2 tsp minced garlic (using a microplane)
  • 1 1/2 tsp calamansi juice 
  • Salt and pepper to taste

Procedure

For the Patty:​
  1. Mix all ingredients together and form into 3oz patties using a 10 cm ring mold. Separate each patty with parchment paper. Allow at least 1-2hours to get all the flavors to mingle before cooking. 
  2. To cook the patties: simply sear on a lightly sprayed non stick pan set on low/med heat and cook for about 2-2 1/2 minutes on each side. 

For the Ramen Burger:​
  1. Boil ramen according to package, drain well using a strainer and press down evenly on a prepared greased 11 1/2”x7 1/2” rectangular baking pan (using an oil spray or oil and evenly coating pan) lightly spray the top of the pressed noodles and 
  2. Air fry at 350 degrees for 20 mins or bake in oven for 40-50 minutes. 
  3. Once it is cool enough to handle invert the pan on a cutting board and cut out using a 10 cm round pastry/cookie cutter. This will make 4 pieces, weighing about a little shy of 3 oz each (Save the noodle scraps for other uses) 
To prepare the ramen bun
  1. In a nonstick pan,  toast “ramen buns” until it gives a nice golden and little charred color on each side. Set aside until ready to use. 

Making Banana Catsup Aioli
  1. Mix all ingredients together until well incorporated. 

To Assemble and Serve
  1. Take about 1/2 a tablespoon of the aioli and spread evenly on one side of the “bun”, top with lettuce, thinly sliced tomatoes and longganisa burger. Spread a little more aioli on top of the burger and top it off with the other ramen “bun” 
  2. Serve with fries or veggies of choice. 
  3. I like serving mine with Jicama sticks and or cucumber, Cornichons and more aioli on the side (also a great dip for the veggies)
  4. Can be served with a vegan cheese of choice. 
  5. Enjoy!
