Vegan Grilled Cheese Sandwich

Who doesn’t love a grilled cheese sandwich? 

Crispy toasted bread on the outside, and when you bite into it, the gooey ooziness of the melted cheese just oozes out and warms your heart, specially on a cold day. 

Chef JP Reyes of Sarap Shop shows how to make one - vegan style. 
Ingredients
  • 8 slices sourdough bread
  • 2 tbsp vegan butter, room temp (suggested brand: Miyoko’s cultured butter)
  • 4 tbsp vegan mayonnaise (suggested brand: Follow Your Heart)
  • 2 tbsp garlic powder
  • 4 slices vegan provolone cheese (suggested brand: Violife or Follow Your Heart)
  • 4 slices vegan cheddar cheese (suggested brand: Violife or Follow Your Heart)

Procedure
  1. On each piece of bread, generously spread cultured butter and mayonnaise on one side. Sprinkle with garlic powder.
  2. Heat a pan or skillet to low-medium heat. 
  3. Assemble the sandwiches in the order of bread (the buttered side facing out), a slice of provolone cheese, spaghetti, a slice of cheddar cheese, bread (the buttered side facing out.) The buttered sides of the bread will be the sides touching the pan.
  4. Place the assembled sandwich on the pan. Toast one side. Check often to catch when it forms a light brown crust. Once lightly toasted, add a bit of water to the pan and cover to steam, allowing the cheese to melt and the side to toast more into a golden-brown crust.
  5. Once you see the cheese has melted and the first side has reached a golden brown, uncover and flip the sandwich on its other side. Let it toast uncovered until the second side reaches a golden-brown crust.
  6. Repeat the above steps for the other three sandwiches.
