PILYO means “cheeky” in Tagalog. PILYO Chefs Morris Baco and Inigo Castillo put the bold and saucy in Grandma Filo’s cooking using a playful approach whilst paying tribute to traditional flavours. So come and shout the all-familiar “wala ‘yan sa lola ko!" (that’s nothing like my grandmother’s!). About Pelago:
Pelago Pop-Up Kusina is a Filipino-inspired pop-up restaurant series based in Philadelphia, PA. Chef Lou Boquila—Philippine-born, American-raised, French-trained, Hip-hop-influenced—draws inspiration from his experiences cooking in his mother’s kitchen and eating at his family table, as well as from the ingredients that are locally grown and produced. His team of back-up dancers come from various arenas of Philadelphia’s vibrant food and beverage industry in support of their front man chef. About Irenia Supper Club:
Since the beginning of Chef Ryan’s culinary career, he has dreamed of opening his own restaurant named after his grandmother, Irenia. His earliest food memories are centered around her making longanisa in his families back yard, wearing floral dresses she sewed herself. However, these aren’t Grandmother’s recipes, but rather Filipino inspired food through Chef’s refined lens. This is food prepared in the style Chef Ryan prefers to eat. Which means, farmers market vegetables, tender braised meats and plenty of perfectly tempered rice. While you’ll find familiar dishes like kinilaw, nilaga and tinola on our revolving menu, you’ll see they are created using unexpected ingredients that conjure unique flavors.
