In this 30-minute class, we explore the basics of Filipino cuisine - its identity, pantry essentials, basic cooking techniques, and evolution. Join Keesa Ocampo of the Filipino Food Movement and Chef Francis Ang of Pinoy Heritage & Abacá for a distillation of what has been the hottest trend in global cuisine. Attendees will also have a chance to win trivia prizes based on the information we learn during the class! |

Francis Ang is the chef/owner of Pinoy Heritage, a Filipino pop-up restaurant that won multiple accolades throughout the years. Opening their first brick and mortar, Abacá, with his wife, Dian they will bring their fine dining experience to where California influences will mingle with Filipino flavors. Having spent more than a decade in the kitchens of Gary Danko, Fifth Floor, Dirty Habit and Taj Campton, Francis has been recognized in Zagat's "30 Under 30" and as a 2018 SF Chronicle Rising Star Chef. LECHE FLAN
Ingredients Egg Sugar Lemon Rind Milk 1. Mix Egg with sugar and lemon rind to break the eggs 2. Add milk - coconut and condensed 3. Combine lemon and sugar 4. Melt and pour into pan 5. Pour mixture into a sieve 6. Pour into prepared pan 7. Cover with foil 8. Put in pan then pour hot water 9. Bake at 350 for 45 minutes Come back with baked and chilled leche flan |
