In Chef Ria's words: In observance of Filipino-American History Month this October, I’ll be making two specials all month long. Two dishes that hold a special place in my heart, that oddly enough I got wrangled into helping prep for – mostly against my will. As a kid, I wanted to run around outside and play with my siblings and cousins, not make hundreds of dumplings or babysit slowly caramelizing coconut milk.
In addition to our Filipino influenced lunch menu, we will also be sharing two comforting dishes that WILD co-creator, Ria Barbosa Wilson grew up making with her family: pancit molo and suman. Join Chefs Ria and Matt Wilson for lunch Wed-Fri for a bowl of warming pancit molo and a helping of sweet suman to round out the meal. |

The Filipino Kamayan dinner is without utensils. The table is set with banana leaves and the food is in enjoyed with the use of the hands. The Kamayan Dinner is now available at Milkfish.
During the month of October we will be offering Kamayan dining for $30 per person. The dinner will be chosen from the chef but will take into consideration food restrictions (ie. vegetarian, gluten free etc.) The parties need to be at least 4 people and they will need to make reservations 1 day in advance. Kamayan will include 2 starters, 2 entree's and 1 dessert along with accompanying sauces and variety of pickled sides. |

Hot on the heels of the Filipino craze that's rippling through DC right now is Kalye, a pop-up concept serving Filipino street food from the Petworth culinary incubator EatsPlace — back for a longer run after a successful debut.
Kalye moves beyond the staples that DC has already starting craving en masse with more adventurous delicacies that are not for the faint of heart. There's also crowd-pleasers like sizzling mushrooms and soy pork shoulder. A full bar will be available with drinks for purchase. Kamayan (Filipino for eating with your hands) is a Philippine family tradition in which mounds of delicious Filipino food is laid out on top of banana leaves that serves as the serving dish and your dinner plate. Every time someone asks us what Filipino food is, our answer is immediate and concise: it is our history on a plate. Philippine cuisine is a reflection of the various cultural influences–consensual or otherwise–that have left their mark on the island nation over the course of its history as a trading partner and occupied territory. Malay influences began some twenty thousand years ago and are challenging to trace, but include the use of vinegar, coconut and coconut milk. Trading with the Chinese began in the ninth or tenth centuries and resulted in the Filipino adoption of noodles, steamed buns, dumplings, egg rolls and the use of condiments. The Spanish left innumerable, indelible marks on Philippine food and culture in their 333 brutal years of colonial rule: meat, dairy, seasonings and spices made their way to the islands from Spain, to say nothing of the produce introduced through Spain’s colonial holdings in the New World. In true imperialist fashion, the United States had a brief hand in Philippine rule and left behind a taste for canned goods and foods of convenience.

The Art Crawl has evolved from a fun weekend art event, to a framework for creating and fostering important, relationships between the artist and the St. Paul Community. Not only does it bring the community together but also put's color and creativity back to a once empty area of St. Paul, to a now thriving creative hub. LolaRosa's was invited to provide food as one of the main food sources for the Art Crawl.
This is great because LolaRosa's is based out of St. Paul and takes pride of the community and hopes to spread the love of Filipino food to the greater public. This event is also perfect for LolaRosa's because it allows up us to show how Filipino food can look beautiful and be creative on our dishes we come up with. LolaRosa's will be showcasing a few new items that weekend. The OFW, which is our play on Kwek Kwek and the Bistek Koreano steamed bun: Filipino Beef steak and caramelized onions topped with a in house kimchi served on a steamed bun. |
