Here, she shows us how to make kare-kare, customarily made with oxtail and tripe, the vegan way.
1 T Annatto seeds
¼ Cup oil of your choice
1-2 T Black Bean Garlic Sauce (or more if
½ Cup Creamy organic peanut butter
3 Cups of water
3 small Chinese eggplants (Large dice and
deep fried to soften)
½ cup green beans (blanched)
2 bundles baby bokchoy (cut into 4,
½ block of firm tofu cut into ½ inch dice
(deep fried until crispy)
